Penne with Ground Turkey and Spinach

We love a good ground turkey dish in our house. Bolognese, sweet potato casserole, anything else I can toss it into?! I found a delicious recipe online that I wanted to make, only I did not have all of the ingredients, so I improvised using what we had which included, of course, ground turkey.

I find myself always gravitating toward pasta dishes, because they are, one, my favorite and, two, they seem to always be the easiest to prepare the greatest crowd pleasers in this house. Admittedly when I first made this recipe, I was in a bit of a hurry because we were juggling sports schedule and making dinner so I think I tweaked too much.

Ingredients:

  • 1 box of penne pasta

  • 1 container of ground turkey

  • 1 medium chopped onion

  • 2 tablespoons of minced garlic

  • 1 tablespoon of dijon mustard

  • 1 cup dry white wine

  • 1/2 cup of heavy cream

  • 1 teaspoon of red chili flakes

  • 2 tablespoons of parmesan

  • salt pepper and garnish with parmesan to taste

The easy summary for this recipe is:

  • Boil water and cook pasta to taste

  • Chop / separate ground turkey and onion and mix with garlic and dijon, season with salt, pepper and chili flakes, sautee until all is golden brown on high heat

  • Add white wine, parmesan and heavy cream and reduce heat to medium and stir until creamy.

  • Add pasta and stir

  • Sprinkle with Parmesan

Then pour yourself a glass of that wine and enjoy!
