Recipes I've Tried Lately: January Edition
Started off the year exploring a few new recipes. When I am in slow season of the winter with less shoots and weddings, it's time to play around with some new recipes for the fam that can be added to our monthly rotation. In our family every one is a bit picky so not having to make 3 different meals a night for various family members is crucial. Chicken is a pretty basic staple in our house that everyone will eat but straying from chicken gets iffy. Italian is also always an easy go to, and of course taco night.
So this month, I was just trying some new flavors and some new easy prep in advance type recipes that then can be good go-to options when I am in busy season. I found these for and tried each of them, obviously made my usual minor tweaks because I am actually terrible at following a recipe (hence why I don't bake).
Cilantro Lime Chicken: https://www.wholekitchensink.com/whole30-chicken-thighs/ - We did this one on the smoker, I went easy on the lime because Patrick doesn't love citrus, but this one was an easy marinade in the morning, through on the smoker and done. For sides we went with rice and spinach.
Salsa Verde Chicken Casserole - https://easychickenrecipes.com/salsa-verde-chicken-casserole/ - This one was a little heavier lift that than the others. We love the Enchiladas from Trader Joes so I was looking for something that could be made at home with ease. Delish flavor just definitely can't be for a busy day for me.
Spaghetti Casserole https://www.saltandlavender.com/baked-spaghetti/ - This was a huge hit all around and SO easy to make. I prepped the pasta the night before and just used jars of sauce and kinda of mixed it all together and baked. Delicious!!
Oven Baked Chicken Thighs https://www.jocooks.com/recipes/oven-baked-chicken-thighs/ - Another chicken dish. This was really similar to my Cream of Chicken Chicken, and could get mixed into the rotation, but nothing "new" for us.
Overall I would try the two casseroles first if you're looking for an easy dish and a flavorful one! Looking forward to seeing if any of these make it into the February rotation.
