Chicken Casserole: Quick Easy Dinner Edition
Who has time to make dinner? After work and kids, activities and housekeeping, it is so hard to find the energy and time to put together a hardy meal that everyone will enjoy. Not to mention, kids and veggies aren’t always the best mix, so when I come across a meal that is quick, easy, has some veggies, and everyone in the family is happy to eat it, I can’t keep it to myself. This Chicken Spinach Casserole is a weekly go-to in our family. It is so delicious, easy to make (so clean up is quick too) and my kids finish their plate every time.
Here’s what you’ll need:
3 boneless skinless chicken breasts
6 tablespoons cream cheese, softened
2 cup spinach, rinsed
2 tablespoons olive oil, divided
1.5 cup Mozzarella cheese, shredded
1 can Cream of Chicken soup
4 tablespoons garlic, minced
1/2 teaspoon red pepper flakes, optional
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon Italian seasoning
2 cups penne pasta
The thing I love best about this casserole is that it is so easy to make it your own! You can add other veggies or seasonings, or mix it up however you want.
Here’s how I make it:
1. Add olive oil, garlic and 1/2 can cream of chicken soup to casserole dish.
2. Then, add chicken over top. Sprinkle chicken with Italian seasoning, salt, pepper and red pepper flakes. Preheat oven to 375
3. Add 2 tablespoons of cream cheese per chicken breast, on top.
4. sprinkle spinach across top of chicken and cream cheese
5. Bake for 10 minutes until spinach is wilted. Bring pot of water to boil for pasta and proceed to cook to directions.
6. Add mozzarella cheese sprinkled generously over top.
7. Bake the spinach chicken casserole for 20-30 minutes until cheese is golden brown.
8. Remove chicken from casserole dish. Add cooked penne pasta to casserole dish, empty 1/2 cream of chicken can into dish and stir with pasta.
9. Serve chicken, cut, over pasta. Enjoy!
