Bell Pepper Bolognese Recipe

Honestly this is my favorite recipe of quarantine. It’s delicious, relatively nutritious and super easy to make! I varied the recipe slightly to what I had available during quarantine but got the original during my subscription to Home Chef. If you like bolognese and bell peppers then it’s a no brainer. All the yummy Italian flavors of Bolognese without the carbs. 

Ingredients: 

  • 1 package of ground turkey 

  • 1/2 large jar of marinara sauce (about 1 cup) - I love the Trader Joe's marinara sauce 

  • 1 large bell pepper (color of your choice, I recommend red) 

  • Garlic to taste 

  • 1/4 of large yellow onion finely chopped 

  • Salt, pepper and oregano to taste 

  • Olive oil

  • 2 tablespoons Mozzarella cheese 

  • 1 tablespoon sour cream 

  • 1 tablespoon Parmesan cheese

  1. Core pepper and cut in half vertically

  2. Oven at 350, sprinkle olive oil, salt and pepper and place pepper pieces in face down 

  3. On medium heat place olive oil, onion and garlic in pan until garlic is browned 

  4. Add meat, salt, pepper and oregano to taste and cook until meat is lightly browned 

  5. Add marinara, sour cream and Parmesan and combine 

  6. Put peppers on broil for a light char on top 

  7. Remove peppers, flip and fill with meat 

  8. Add 1 tablespoon of mozzarella on top of each and let melt (or melt in microwave) 

Et voila! The most yummy meal I’ve had at home in awhile!
