Quick Trader Joe’s Meals

I am not health food expert so please don’t take this as a healthy food haul but rather I am a mom constantly on the go and finding time to cook the family every meal can be very difficult. We often have easy fajita nights or what Pat likes to call “bowls” which is just rice with whatever meat I can spice up and cook.

But sometimes it’s just easier to grab a few quick things at Trader Joe’s that are easy to cook and the whole family will eat (including my picky 2 year old). So these are our go-to’s.

  1. Cauliflower Pizza: The only pizza my child will eat. #obsessed

  1. Gnocchi: SO easy to make and because duh. Carbs.

  2. Green Chili Chicken Enchilada: These are seriously crack and so easy to make. I just put them in the oven on 375 for 15-20 minutes until they crisp up just slightly.

  3. Fried Rice: This one is a real crowd pleaser in my house mostly because Cannon is a rice freak but it has a good mix of veggies and I will usually go it as a side to some chicken.

  4. Chicken Tikka Masala: Patrick’s personal favorite and usually my go-to for him when I am not home.

While I don’t usually like to have too many “frozen meals”, I probably buy all of the above every other week to keep on hand in the freezer for nights when I’m not home or just too damn tired to cook anything major.
