Spinach Avocado Salad with Lime Vinaigrette

I have been struggling to eat veggie during this pregnancy. For some reason with both of my boys it has been all carbs, all the time. I do enjoy a good salad (Sweetgreen get in my belly), but it's definitely not something I am eager to eat. So, when I find a salad I like that is easy to make then I am here for it!

I adapted this easy to make, healthy to eat salad from Jessie James Decker's "Just Feed Me" cookbook. Admittedly the first time I made it I way overdid it on the onions, and I think the small cubes you can cut them into the better, but overall it has a great mix of flavors.

I was not a huge fan of the vinaigrette that she paired it with in the book so I went with a new option that felt a bit light to me, I love a good lime based dressing!

Salad Ingredients

1/2 cucumber, sliced

1 avocado, cubed

1/4 medium red onion, cubed

3 cups Spinach

2 ounces Feta cheese, crumbled

Dressing Ingredients

Juice of 1 Lime

2 tablespoons of Honey

1 teaspoon Dijon mustard

1 teaspoon garlic powder (1/2 teaspoon for fresh / minced garlic)

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon cumin

1/2 cup sesame, vegetable oil or avocado oil (your preference)

Recipe

  1. Make the dressing by mix together all of the ingredients, start with the liquids and build onto it with the seasonings. Shake and let sit while making the salad

  2. In a large bowl mix together salad ingredients, leaving out the Feta.

  3. Add dressing and mix with salad and let sit to combine flavors for 5-10 minutes before serving

  4. Crumble Feta and serve!

It really is that easy … and delicious! If you are struggling with a salad to eat that is light summer and easy to make, this is it!
