Recipe: Onion Spinach Garlic Toasts

Alright y’all… You know how much I love Jillian Harris! So when her new cook book came out, I was BEYOND excited about it! Jillian cooks with vegetarian / vegan options in mind so the cook book is not geared toward meat lovers however I think that there are a few recipes you could make slight changes to and make them more meat lover friendly. 

One of the first recipes I was excited to try where the Mushroom Kale Garlic Toasts. I love a good toast option specifically for entertaining! Now, I won’t share her recipe because, well, you should buy the book, but I will say that while this toast is delicious, kale is not my favorite! So, I present to you… Elizabeth Carberry’s Onion Spinach Garlic Toasts. 

You Need: 

1 baguette 

1 package of spinach 

1 large yellow onion 

2 cloves of garlic finely chopped (or 1 tbsp of chopped garlic) 

1 package of seasoned goat cheese 

Salt + Pepper

  1. Slice baguette evenly until completely sliced

  2. Preheat oven to 395 and spray or line a baking sheet 

  3. Heat a pan with 2 tbsp of olive oil and add garlic 

  4. Once hot, add onion to sauté, salt and pepper to taste, cook until lightly browned 

  5. Add bread to oven to cook until golden brown 

  6. Once onions are done, reheat pan with olive oil and add spinach, cook until just barely wilted 

  7. Construct toast: Bread, spread cheese, spinach, then onion

It’s an easy way to impress guests and a fun treat if you wanted to make it for at home brunch some time!
