recipe: butternut squash bacon dip
It’s Patriots season… oh I’m sorry I meant football season! Which means dips and chips and wings and pumpkin beers! And this dip is sure to be a winner for your next fall gathering. The basic b*tch that I am enjoys incorporating butternut squash in anything and everything I possibly can.
Not the healthiest of recipes but definitely a yummy one!
Ingredients:
1.5 cups chopped butternut squash
Oil, salt, pepper and Italian seasoning to taste
1 large onion thinly sliced
1/2 package of thick cut bacon
2 gloves garlic
1/2 bag of spinach (3 ounces)
12 ounces of cream cheese (soft)
1 cup sour cream
1 tablespoon mayo
Mexican blend cheese
Recipe:
Lay butternut squash out on a baking dish. Season with salt, pepper and Italian seasoning to taste. Drizzle with olive. Bake in oven at 400 until golden brown and soft.
Place baking in oven to cook while butternut squash is in.
While butternut squash bakes, caramelize onions with a pinch of garlic.
Add salt to same pan, add spinach and quickly blanch spinach
In a bowl mix together the cream cheese, sour cream, mayo, cheese, salt, pepper, garlic and Italian seasoning until smooth.
Chop bacon up into small bites.
One at a time, mix in the (cooled) butternut squash, bacon, spinach and onions.
