recipe. breakfast bowl.

I'm not a big breakfast person. And admittedly whenever I do eat breakfast it's a pastry of some kind. But... about a year ago my brother was visiting and having recently returned from a trip to Costa Rican, wanted to make an inspired breakfast. So we made a breakfast bowl of rice, sausage, beans, green onion, cilantro and hot sauce. It was delicious!!! Since then, I have made multiple variations of the dish it's pretty much the only breakfast I will make myself!

Variations have included different meats, chicken, sausages, bacon, and various vegetables, onion and pepper mostly. But for our purposes I got the most delicious chorizo that I had to add to the dish. Here's the recipe:

1 can black beans (rinse and dry)

2 cups of brown rice (cook as instructed)

Cook and chop 1 chorizo link (or meat of your choice)

1/2 cooked onion ... and here's where the yumminess comes in for the onions. The recipe (loosely borrowed from a blue apron recipe I made) is:

- warm small skillet with olive

- add half a red onion diced

- add a teaspoon of brown sugar

- add a tablespoon of apple cider vineager

- add a teaspoon of honey

- a pinch of garlic, salt and pepper

- stir until onions are soft and slightly browned

This will make about 4 mornings worth of breakfast. Enjoy!
