friendsgiving recipe.

Thanksgiving is my FAVORITE holiday. It’s the only holiday that is still truly just about spending time with the most important people in your life and of course my second favorite hubby these days, eating. For the last five years I have been hosting my dc framily for our annual friendsgiving. A little tradition that I have started is introducing a new menu item every year. Last year I made an amazing butternut squash soup, and this year continued the butternut squash theme.

Enter… butternut squash goat cheese mousse crostini. A recipe of my very own inspired by various pinterest and food network findings.

Ingredients:

1 butternut squash (peeled, cleaned and cubed)

1 large goat cheese  (11 oz. – Silver Goat recommended)  - http://www.silvergoatcheese.com/

1/2 cup of olive oil

¼ cup of milk

½ loaf of whole-wheat sour dough bread (sliced into small squares)

1 tbsp. brown sugar

salt, pepper, Italian seasoning, garlic powder

this recipe comes together in three super easy parts.

Part 1: butternut squash: once peeled and cubed, boil it all. until it’s just slightly soft (don’t overdo it). Once soft, lay the cubes out of a roasting pan and sprinkle with ¼ cup of olive oil, 1 tbsp of brown sugar, salt, pepper and Italian seasoning to taste. Broil until the cubes are your desired toastiness. Let cool.

Part 2: goat cheese mousse: in a medium mixing bowl combine the goat cheese, ¼ cup of olive oil, ¼ cup of milk, salt, pepper, Italian seasoning to taste and whip until creamy. *note: best of goat cheese is at room temperature before mixing

Part 3: crostini: once the bread is sliced into small squares, lay on roasting pan, lightly dust with olive oil and a sprinkle of garlic powder. Toast in the oven on broil until golden brown.

Then build your crostini and enjoy! They were a huge hit at my house so hopefully they will be quick and easy for all to enjoy this thanksgiving! HAPPY THANKSGIVING!
