recipe: butternut squash bacon dip

It’s Patriots season… oh I’m sorry I meant football season! Which means dips and chips and wings and pumpkin beers! And this dip is sure to be a winner for your next fall gathering. The basic b*tch that I am enjoys incorporating butternut squash in anything and everything I possibly can.

Not the healthiest of recipes but definitely a yummy one!

  2. Place baking in oven to cook while butternut squash is in.

  3. While butternut squash bakes, caramelize onions with a pinch of garlic.

  4. Add salt to same pan, add spinach and quickly blanch spinach

  5. In a bowl mix together the cream cheese, sour cream, mayo, cheese, salt, pepper, garlic and Italian seasoning until smooth.

  6. Chop bacon up into small bites.

  7. One at a time, mix in the (cooled) butternut squash, bacon, spinach and onions.

Go pats go! Enjoy friends!
