Trying to get healthy post baby is nearly impossible some days. Especially while breastfeeding. So I have probably tried every diet method you can think of but honestly the problem is more time and energy for working out (maybe more on that in another post). For now I will try to share some healthy(ish) recipes that I am totally obsessed with.
First up is my go to lunch - The Mushroom Melt. It’s nothing fancy but it’s a super quick and easy lunch. All you need is:
1/4 of a white, sweet or vidalia onion
1/2 cup of chopped shitake mushrooms
1 cup of spinach
1/4 cup of low fat cheese (I prefer the Mexican blend)
2 slices of sourdough bread
Pepper, garlic, red chili flakes
(Ideally you also have a panini press - otherwise just a frying pan will do)
In a frying pan cooking until soft the onion and mushrooms, season with pepper, lemon juice, a pinch of garlic and a pinch of red chili flakes. Once soft, turn off heat and add spinach.
While finishing the veggies, put cheese on one of the slices of bread and add to heat. Once spinach is almost completely wilted, scoop entire contents of veggie mix on top of the cheesey my bread slice, then top with second slice of bread and warm to melty goodness.
Voila your mushroom melt is complete!
PS: You may have noticed I used not so salt, oil or butter, that is too keep this on the healthy side.
PPS: To make his even healthier, substitute the sourdough for whole wheat bread.
